Turkey or chicken salad sandwiches are my favorite way to eat leftover poultry. My typically recipe would sub the cranberry sauce for chopped apples, but if you have an abundance of cranberry sauce left, this is a tasty way to use it. This takes literally about 10 minutes to make and is an easy lunch option for the week.
Turkey Salad Ingredients
- 2 cups chopped, cooked turkey or chicken
- 1/2 cup cranberry sauce
- 1 stalk celery, finely chopped
- 1/2 cup finely chopped onion
- 1/4 cup mayonnaise
- 1-2 teaspoons dried tarragon (or 1-2 Tbsp fresh chopped tarragon)
- Salt and pepper to taste
Combine all ingredients and mix throughly. Allow flavor to intensify overnight for the best tasting option.
