Meatless Meal Prep Monday
I have noticed lately that there has been a increase in the amount of people who have started to embrace a meatless diet, specifically in the black and brown community. A good friend of gave up meat (except fish) earlier this year for health reasons. We give her hell for it at times, but I started looking into the benefits of it, and long term, it’s actually a good thing more than likely. I decided to try it for a week to see how I like it and if I will maybe continue it, or at least cut down on the amount of meat I consume. My love of bacon and ham runs deep, and they are considered the worst for you, but I feel like I could give up the rest without much fuss.
Meatless Week Rules
- No chicken,beef or pork
- Eggs and Fish are ok
- No cheating
- No calorie counting
I wanted to give myself some wiggle room. This past weekend I went to my favorite local farmers market, as well as Sprouts to stock up on food for the week. We meal prepped last night and here’s what I came up with. I am also planning on monitoring how I feel this week as well as my weight to see if I notice any differences.
Meal 1: My Favorite Green Smoothie Recipe and 2 eggs
Meal 2: Smoked Salmon Bagel with capers and cream cheese
Meal 3: Indian Saag Aloo, curry Potatoes Brown Rice, and Roti Bread
Meal 4: Chili with beans and lentils and green beans
Meal 5*: Trout and Rice and Broccoli
*If I’m Hungry
