Carbs are my downfall. Lately I have been trying to figure out ways to decrease the amount I eat. Pinterest is a great resource for recipes and food options for pretty much any diet you are attempting to try. I reworked a cabbage soup recipe I found to fit what I what I was craving at the time. This soup is perfect for a chilly day, and makes a great and filling lunch when paired with a roll or cornbread (if you aren’t carb conscious). I also love that it’s so easy to sub ingredients for different food restrictions or tastes. You can easily make this vegetarian and vegan by just swapping out the protein and broth. Enjoy!
4 cups of chopped cabbage
1 small can of diced tomatoes
3-4 cups of beef broth
6 oz of ground sausage, prepared
4-6 slices of thick cut bacon, fried and chopped
1 clove of garlic, diced
1 small onion chopped
Combine all ingredients in crockpot or in pot on stove top.
Stovetop: bring to a boil and simmer for at least 30 minutes, the longer the better
Crockpot: set and forget for at least 8 hours on low or 5-6 hours on high
